Whole Wheat Chocolate Chip Cookies

Whole Wheat Chocolate Chip Cookies
1 cup (2 sticks) cold, unsalted butter, cut into cubes
1 cup light brown sugar
1 cup granulated sugar
2 large eggs
3 cups whole wheat  white flour (I use King Arthur’s)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon  salt
2 teaspoons pure vanilla extract
12 ounces of semisweet chocolate chips

Place on parchment paper lined cookie sheet using a cookie dough scoop.
Bake 350° for 6-10 mins.
Transfer cookies, still on parchment paper, to cooling rack.


Chicken Spinach Lasagna

Chicken Spinach Lasagna
(adapted from Trisha Yearwood’s recipe)
1-(10 ounce) package frozen spinach, thawed and drained
2 cups cooked chicken, shredded
2 cups cheddar cheese, grated
1 tablespoon cornstarch
1 tablespoon soy sauce
1 (10 ounce) can cream of mushroom soup
1 cup sour cream
1 (4 1/2 ounce) jar mushrooms, drained
1/3 cup mayonnaise
6 lasagna noodles
1 cup parmesan cheese, grated
1 cup pecans, chopped (I omit)

Preheat oven to 350°.
In a large bowl, combine spinach, chicken, cheddar cheese, onion, cornstarch, soy sauce, soup,sour cream, mushrooms and mayonnaise.
Put a layer of noodles in the bottom of a greased 9x13x2 inch pan.
Spread half of the spinach mixture over noodles.
Place another layer of noodles on top and cover with remaining spinach mixture.
Sprinkle parmesan cheese. If desired, top with pecans.
Bake for 1 hour.


Sausage, Egg, & Cheese Breakfast Casserole

Sausage, Egg, & Cheese Breakfast Casserole
9 eggs
1 ½  lbs grated sharp cheese
1 lb sausage, browned and drained
3 cups milk
1 tsp salt
pepper, to taste
1 ½ tsp dry mustard
3 slices of bread, trimmed and cubed

Beat eggs, add remaining ingredients.
Pour into a greased casserole dish,
Bake at 350° for 45 minutes, covered.
Uncover and bake for an additional 15 minutes.

Can be prepared the night before and cooked the next morning.


Homemade Taco Seasoning

Homemade Taco Seasoning
1 TBS chili powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp ground red pepper
½ tsp paprika
1 ½  tsp ground cumin
1 tsp sea salt
1 tsp pepper

Brown meat, drain.
Return cooked meat to skillet and add 2-3 TBS per 1lb of meat. Add ½-¾ cup of water and cook until well combined.
